Rosemary Roasted Potatoes

Ingredients

• 1 ½ pounds yams/sweet potatoes (2-3)
• 1/8 cup good olive oil
• ½ tsp Himalayan salt
• ½ tsp freshly ground black pepper
• 1 Tbsp minced garlic (3 cloves)
• 2 Tbsp minced fresh rosemary leaves


Directions

  1. Preheat the oven to 400 degrees.
  2. Cut the potatoes into larger bite-sized pieces and place them in a bowl.
  3. Add olive oil, salt, pepper, garlic, and rosemary to a bowl and toss.
  4. Place potatoes on a baking sheet and spread out in 1 layer.
  5. Roast in the oven for 45-60 mins depending on the size of pieces.
  6. Flip twice with a spatula during cooking to ensure even browning.
  7. Remove the potatoes from the oven, season to taste, serve.
